shrimp scampi linguine.

My friend Taylor has a wonderful blog Love in Spoonfuls. I actually start off my morning after breakfast reading her blog to give myself some ideas of what to make for dinner while I have my morning snack. It was on her blog that I came across Ina Garten's linguine with shrimp scampi recipe. With a little bit extra of some ingredients here and there (aka more butter, garlic and chili flakes) it was one of the better pasta's I have ever made. Lemony, buttery, garlicy, with fresh juicy large shrimp... shrimply divine.

eggs and avocado.

Eggcellent breakfast. All you need (1 serving):
1 whole wheat English muffin, toasted.
half an avocado
1 free range egg, fried over easy
dill cream cheese (mix cream cheese and chopped up fresh dill)
little bit of butter for one of the halves that will be topped with avocado (optional)
sea salt and cracked pepper to taste

You can either put it together as a sandwich, or have it separately (what I did). It's a simple and fresh way to get healthy fats and protein in your breakfast, enjoy!

cous cous.

I love cous cous because of how quickly it can be made and how delicious and nutritious it is. It is such an amazing alternative to rice or pasta, which I eat everyday otherwise. It works with nearly everything (you can even mix it with cinnamon, almonds and sugar as a little dessert!). Usually my cous cous recipe adapts to whatever is in my fridge. This time I sauteed yellow, green, and red peppers, carrots and jalepenos and mixed it all in with my cooked cous cous that I cooked in vegetable broth instead of water. Then I added smoked tofu, corn, beans, feta cheese and topped it all off with cilantro. Click here to read how to make cous cous and here for more ideas of what to make with it.

bread & cheese.

This is so simple, yet so tasty. You have to try this - the bread and cheese you'll most likely have to buy at a Persian food store... I haven't found the bread anywhere else :| that's the only downfall. I'm sure it is easy to substitute.... but it's just not the same.

Buy: Sangak bread (which is about 2-feet long whole wheat sour dough flat bread), organic honey, macedonian cheese, walnuts.

Cut the bread (I find cutting it with scissors is easiest), toast it. Spread the cheese on top, crumble some walnuts and then drizzle the honey. And that's it. Simple and SO addicting you'll probably make a few.

salmon wraps.

It has been way harder than I thought to write out recipes because usually I just whip up something depending on what is already in my kitchen and what I can quickly grab at the grocery store. Even if I use other recipes, they are often for inspiration or I will add in a little bit of this or that to give it my own twist. I haven't made this dish before, but I have used similar flavours, and this turned out really great. I find as long as you keep tasting along the way and add a little bit of flavour at a time, it turns out delicious. Using fresh ingredients for this recipe makes a huge difference - I will try to write it out as close to what I did as I can. Click to read more for the recipe!
