eggs and avocado.

Eggcellent breakfast. All you need (1 serving):
1 whole wheat English muffin, toasted.
half an avocado
1 free range egg, fried over easy
dill cream cheese (mix cream cheese and chopped up fresh dill)
little bit of butter for one of the halves that will be topped with avocado (optional)
sea salt and cracked pepper to taste
You can either put it together as a sandwich, or have it separately (what I did).It's a simple and fresh way to get healthy fats and protein in your breakfast, enjoy!

Yum. When I saw this post I wanted to try it and haVe had it for breakfast the past 4 days. I poached the egg instead, skipped the dill cream cheese and added a squeeze of lemon juice on top of the avocado side and still delish!
