tofu.

Soy sauce, ginger, garlic and chili powder are a few components that can make some dishes taste so wonderful (especially in one of my favourite dishes - shrimp dumplings, which I will try to make sometime soon!) It also nicely compliments tofu, giving it a bold flavour which makes it easier to eat. I recently came upon a little more complex version of the dish I usually make (asks for cornstarch and some flour) and it turned out GREAT. Pair it with some sushi rice and some vegetables and you got yourself a delicious meal. curried quinoa with fresh mango. 

Curried quinoa salad with mango is a dish that is light, flavourful and incredibly delicious. (Definitely a whole different flavour profile than the quinoa recipe I tried last month - posted here). This dish is so easy to make, and another perk is that it can be eaten right away or even cold the next day. Play around with the recipe to your tasting - I added a little more curry, extra mango chunks, a handful of green onions, substituted olive oil for canola oil (and used less) and lastly substituted the spinach for arugula and mixed greens.

potatoes.

I love potatoes. I love fries, baked potatoes, mashed potatoes, poutine (especially poutine because it's mixed with my favourite food - CHEESE), gnocchi, hashbrowns, and the list goes on. I usually have potatoes in a few dishes during the week. Tonight, since I had some large baking potatoes, I decided to make fries. You can make this recipe with sweet potatoes, yam potatoes, or all three kinds of potatoes, or even just use the fingerling potatoes instead. All you to the potatoes: wash them, cut them, coat them and bake (click read more for recipe). Then you have some delicious crunchy potatoes.

guacamole.

Guacamole is ANOTHER one of my favourite dips to make because it is so easy, delicious and healthy. This dip too is so lovely because of the variety of ingredients you can add to it to make it different each time. Usually, I just use avocado, lemon, salt, pepper and cilantro. Today, I added some diced tomatoes, jalopeños, and red onions and some grounded coriander and fenugreek for an extra kick.

hummus.

Hummus is one of my favourite dips to make because it is so easy, delicious and healthy. I just blend chickpeas, tahini, lots of fresh garlic, lemon juice, sea salt, and cracked pepper. After the ingredients are all blended I drizzle some extra virgin olive oil on top. This is just basic hummus, but can be made a variety of ways by adding some cilantro, parsley, jalopeños, or roasted red peppers.
