potatoes.

I love potatoes. I love fries, baked potatoes, mashed potatoes, poutine (especially poutine because it's mixed with my favourite food - CHEESE), gnocchi, hashbrowns, and the list goes on. I usually have potatoes in a few dishes during the week. Tonight, since I had some large baking potatoes, I decided to make fries. You can make this recipe with sweet potatoes, yam potatoes, or all three kinds of potatoes, or even just use the fingerling potatoes instead. All you to the potatoes: wash them, cut them, coat them and bake (click read more for recipe). Then you have some delicious crunchy potatoes.

To make a couple servings:
4 large potatoes (regular, sweet, or yam) cut into fry sizes OR
bag of fingerling potatoes, halved
sea salt and cracked pepper
oregano (for fingerling potatoes)
rosemary (for fingerling potatoes)
thyme (for fingerling potatoes)

Preheat the oven to 450 Celsius. Then, coat the potatoes in the olive oil, sea salt and pepper. Place on a baking sheet or tin foil. When oven is ready, bake for around 35-45 minutes (keep an eye on them, it depends on your oven). The potatoes should be browned and crunchy. Dip it in some mayo and if you want, add a little wasabi to the mayo as well for a little kick.

If using the fingerling potatoes follow the exact instructions above but include rosemary, oregano and thyme. Place the flat side of the halves onto the baking sheet or tin foil before baking.
